Combined Pulsed Electric Field with Antimicrobial Caps for Extending Shelf Life of Orange Juice

The purpose of this study was to investigate the effectiveness combined pulsed electric fields (PEF) and antimicrobial packaging treatment in maintaining quality stability orange juice stored at 10 °C. Orange treated by PEF glass jars with caps coated µL carvacrol essential oil (AP). Microbial reductions physiochemical properties samples were determined after treatments during storage subjected (PEF+AP) had lowest yeast mold populations 14 day-storage There no significant differences pH, acidity, color, total soluble solid contents, phenol compounds, Vitamin C among all treatments. Storage studies showed that PEF, AP, PEF+AP maintained °C for 5 weeks but lost C. This provides valuable information processors consideration design nonthermal pasteurization products.
